You will have to make sure that you don’t drink the coffee in the paper cup because the coffee may spill and you will need to be able to clean up the spill. The spill will then have to be taken up into another cup and put into the trash bin for future use.

The second reason you might want to put your coffee grounds down the sink is that you can drink the coffee down the sink without having to worry about getting too much water in the sink. You can simply drink the coffee and then use the rest of the water that you use to rinse the sink.
